Beetroot is a round root vegetable, slightly smaller than a tennis ball - notable for its dark purple colour.
It's usually boiled or steamed or cooked in a pressure cooker, but served cold or pickled & can be eaten with salads or sliced & makes a great cheddar cheese & beetroot sandwich.

When hot straight out of the pressure cooker, you have to peel of the skin with your hands & it stains your hands deep purple, but cover it in butter & salt & pepper & eat it hot & it is gorgeous - a vegetable you can eat on its own with no meat or potatoes or anything!
